It’s my friend, Becki’s, birthday tomorrow. I get to see her bright and early tomorrow morning at work. I don’t think you can start a birthday morning without a homemade scone, so I will be bringing her these tomorrow.  Happy Birthday Becki!

blackberry and white chip scones

found in my friend Mary’s breakfast recipe book

Ingrediants:

1 3/4 cup flour

3 Tbs. sugar

2 1/2 tsp. baking powder

1/2 tsp. salt

1/3 cup butter, firm

1 large egg, beaten

1/2 tsp. almond extract

3/4 cup blackberries, unthawed

2/3 cup white chips

1/2 cup heaving whipping cream

Directions:

Preheat the oven to 400 degrees. Mix together the dry ingredients in a large bowl. Cut in butter and mix together until it reaches fine crumb consistency. Stir in the egg, extract, berries, white chips, and cream until dough leaves the side of the bowl. Coat the outside in flour and place on a greased baking sheet. Score the top into eight wedges. Bake for 15 – 20 minutes or until golden brown. Cut apart into eight scones.
