This past month, I just remembered that I had a bag of frozen cranberries in my freezer.  I had purchased them fresh at a harvest supper this past November.  It was kind of like finding a dollar in your jean’s pocket after you have already washed them a few times.

Exciting…and inspiring…what should I spend it on? What should I bake with it?

Quick breads are a great morning and evening snack, especially with coffee.

I found this bread recipe, but was missing a few of the ingredients, so I did make some substitutions. It has already disappeared from my counter. Yum yum!

Banana, Cranberry, Apple Bread

Ingredients:

1 large ripe banana, smashed

1 large apple, diced

1/3 cup applesauce, unsweetened

1/3 cup melted salted butter

3/4-1 cup light brown sugar

1 egg, beaten

1 teaspoon vanilla

1 tablespoon brandy

1 teaspoon baking soda

Pinch of salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 1/2 cup of flour

1 cup frozen cranberries

Directions:

Preheat the oven to 350°F. In a large bowl, mix the butter and mashed bananas with a whisk. Stir in the apple sauce. Mix in the sugar, egg, vanilla, brandy, and spices. Sift together the flour, baking soda, and salt. Stir into the moist ingredients until incorporated. Add the apples and cranberries, stir. Pour the mixture into a buttered 4 x 8 inch loaf pan. Bake for 1 hour, or until golden brown and a toothpick comes out clean.
